Nuts and dried fruit used in cake

To prevent nuts and dried fruit from sinking to the bottom of a cake they should be coated in flour beforehand. Nuts, dried fruit and alcohol should be added to dough at the very last moment. Raisins and plums need to be soaked in hot water before being added to dough. Unless soaked they will be too tough. It is highly recommended to soak plums in tea. In order to peel hazels it is worth placing them in a heated oven for 10 to 12 minutes. Scald almonds before peeling them. Do not add orange or lemon peel together with vanilla to dough.
